Long days at work, short hours of day light and no desire to cook. It only takes one night of good sleep and the inspiration is back.
A few days ago I came back from my trip to Japan, LA, Sint Maarten and St Barth. The food on airplanes I try to avoid and eating on the road can make you feel tired. After I recovered from a 5 day illness and living on the BRAT. Short for B banana, R rice, A apple sauce and T tea. My body needs extra care and I needed to make sure to get as much as possible nutrition to me.
Everything has to be fast with a hungry mind like mine with very little patience when the hangry-ness shows up. No time for browsing hours in a store for food. A quick stroll to the grocery store and I came home with a bag full of different dutch cheese, pasta, rice noodles, a kilo of fresh spinach, chicken, berries and greek yoghurt.
30 seconds of preparation to get the cooking equipment of the cooking plate and a new dish was born in the Kitchen Of Nine.
A easy peasy rice noodles dish with spinach and protein.
RICE NOODLES WITH SPINACH ++
INGREDIENTS:
- OPTIONAL: CHICKEN / SHRIMP
- SPINACH
- SALT/PEPPER
- 1 TEA SPOON/ PERSON SATAY SAUCE
- OIL TO COOK THE PROTEINS
- WATER
TIP! USE CHILI SAUCE INSTEAD OF SATAY SAUCE
INSTRUCTIONS:
- BOIL NOODLES & STIR-FRY SPINACH & ONE OF THE PROTEINS
- ADD SALT & PEPPER
- MIX EVERYTHING!
- MIX ONE TEA SPOON SATAY SAUCE WITH WATER
- FINISH OFF WITH CASHEWS OR CORIANDER
THIS DISH CAN BE CONSUMED WARM OR COLD.
