MEDITERRANEAN THAI CURRY ON FIRE

Food is something we all need. It satisfies our hunger and in between, it keeps us going, triggers memories and lifts us up when make good choices.

Cooking became part of my life to understand my body, stay fit and explore the world of tastes. Touring the globe with my music has given me the chance to eat at the best restaurants in the world. Visiting to local hotspots, street markets, meeting people from different cultures in their cities who welcomed me at their homes to experience local meals have widen my horizon in all kind of ways.

My favorite place is the kitchen, this is were great ideas start and good conversations are held. In the Kitchen Of Nine I’m sharing what I have learned working in the fashion industry to stay in shape and not take your body for granted, to keep up with a hectic work and travel schedule and get the maximum energy from ingredients to stay in balance. My focus is on quick and healthy meals with a twist to spice your life up.

A quick & easy recipe to feed the whole family. The beauty of this dish is that you can add as many of your favorite ingredients. Just follow the steps in order here:

What we need?

Ingredients:

  • broth (optional)

  • coconut milk

  • Panang Curry Paste (asian store)

  • tomato

  • lemongrass

  • champignon

  • broccoli

  • onions

  • potato

  • ginger

  • chili

  • tofu or chicken

  • salt

  • koriander

  • rice

  • pok choy

For the chicken lovers I cooked a whole chicken to get the broth which I mix with the coconut milk to give the soup some body. If you are vegan or vegetarian you can choose a alternative or add extra spices to it for that extra kick.

Cut all the vegetables and add in order to the soup. Let every boil on low heat. Cook the rice and to give the soup extra body you can add potatoes which is optional depending on your diet and hunger.

Pok choy I cook separate to keep the vitamins and color. Season it off with salt for the tastes to come to life, stir and serve in a bowl.

Pretty easy, isn’t it?
