Do you often buy things just because they are healthy?

I do sometimes. And now it’s time to use this stuff before it gets old and you throw it away.

Diets? I don’t believe in diets, they only work when you follow them for the rest of your life. But I do believe in lifestyle. You are what you eat and I want to enjoy life, indulge, experiment and feel good in my skin.

Here they are: ‘crispy baked chickpeas’

A healthy snack for your next movie night or for those little in between cravings.

What do you need?

Ingredients

  • cooked chickpeas  (500gr)
  • 2-3 TBSP coconut flour
  • 2-3 TBSP sesame seeds (can be mixed black/white)
  • 2-3 TBSP garlic powder
  • a little bit of fine sugar or 1-2 TBSP of maple syrup (up to you how sweet you want it to be)
  • 2-3 TBSP coconut oil or olive oil

If you use fresh chickpeas you need to wash them in water and soak them for about 8-10 hours before cooking.

When you use canned chickpeas, you need to rinse them well and pat them dry with a clean towel or paper towel.

Important, they need to be dry.

You can remove the skin of the chickpeas, but you don’t have to. I didn’t do it with mine.

  • mix all the spices and ingredients together 
  • preheat your oven to 175C and spread the chickpeas on top of baking paper
  • bake for 30 minutes
  • check if they have a nice golden color, toss them gently and heat them some more for another 15-25 minutes 
  • try one to see if they are still soft inside, when not it’s time to take them out of the oven
  • let them cool before serving

  • high in protein
  • rich in antioxidants and minerals such as iron, zinc, magnesium, folate, phosphorous
  • contains a number of essential vitamins like vitamin C, A, B6, B12, K, thiamin, riboflavin, niacin

While eating them my brain already starts to think what other flavors can I try to make. Well, fresh rosemary with Himalaya salt is definitely something I try next time
